“These chicken skewer stacks look so impressive, taste delicious and are so easy to make,” she said.

“The whole family will love them.

“Perfect as part of a main meal, with salad, as a snack or for a quick and tasty lunch. Can be eaten hot or cold.

“They are particularly good cooked on the barbecue.”

Ingredients

Serves 4

Eight chicken thigh fillets

One tablespoon smoked paprika

Three cloves garlic crushed

One tablespoon Olive oil

Half to one teaspoon Piri Piri oil or Piri Piri spice

Three tablespoons tomato puree

Three long skewers

Method

1: Mix the paprika, garlic, oil, Piri Piri and tomato puree together and rub into each chicken thigh.

2: Using the three skewers - one at each end and one in the middle - push the thighs on top of each other to create your stack.

3: Air fry or oven bake at 180 degrees for 30 to 45 minutes or until fully cooked (75 degrees in the centre/thickest part).

4: Turn the chicken during cooking, to ensure even cooking.

5: The chicken should be slightly blackened around the edges. Also perfect for a barbecue.
